1. In a large bowl, mix together cheese, egg, flour, sugar, salt, and baking powder. Mix well, make sure there are no lumps. Start with 1/2 cup of flour. If your cheese mixture is too runny, add more flour.



2. Preheat a large skillet over medium heat with 2-3 Tbsp extra light olive oil.
3. To prevent the cheese mixture from sticking, start by wetting your hands. Form thick pancakes and place them into a skillet one by one. If the cheese begins to stick to your hands, simply wet them again.

4. Cook pancakes on one side until they are golden brown. Use a pancake turner to flip the pancakes and cook until the other side is also golden brown.


5. Transfer to a plate; serve immediately with sour cream, jam, or berries.
