This radish and cucumber Spring salad is light and refreshing. It is popular in Ukraine and my mom’s favorite. I hope you’ll enjoy it too!
Ingredients:
– 2 bunches radishes – about 18 pieces
– 3 small cucumbers or ½ large English cucumber
– 1 bunch green onions
– ½ cup sour cream
– ¼ tsp salt or to taste
– black pepper to taste
Instructions:
1. Thinly slice radishes.
2. Thinly slice cucumbers. For large English cucumbers, slice them into half-circles.
3. Chop green onions. You can use green and white parts of the onions or only green part (what I used).
4. Combine sliced radishes, cucumbers and chopped onions in a salad bowl.
5. Add sour cream, salt, and pepper to the salad just before serving. If the salad sits too long, the cucumbers will release juice and the dressing will become watery. But it will still be tasty! Enjoy!

I was taught by my mom to put the sliced radishes in a bowl, generously salt them, and let them sit for a bit. The pour out the water and add the rest of the ingredients – this takes the bitterness out of the radishes.

Yes, if radishes are bitter, you can do that. Normally Spring radishes are not bitter, they develop bitterness later in summer when the weather is getting hot.
