If you have a lot of squash in your garden, you can make this popular Ukrainian dish Squash Paste or Squash Caviar. This classic recipe originated back from Soviet times.
Squash Caviar (Kabachkova Ikra in Ukrainian) was one of the most popular canned vegetables that you could buy in the store during Soviet time. It was cheap and always available. The squash caviar is still one of the most favorite foods in Ukraine.
Squash Caviar is great warm as a side dish or cold as a dip or spread.

Squash Paste (Squash Caviar)

Ingredients:
3 yellow squashes (you can use zucchini as well) – total weight about 2-2.5 lb
2 onions
2 carrots
4-5 Tbs tomato sauce
2 garlic cloves, minced
3 Tbs oil (sunflower or organic canola oil)
Salt, pepper to taste
Fresh dill
Directions:
4. Cover a skillet with lid and sauté on low – medium heat for about 20-30 minutes stirring occasionally.
5. Add tomato sauce, garlic, salt, and pepper. Sauté for another 10 minutes.
6. Add chopped dill, adjust salt, turn off the heat.
